Azuki Beans with Kabocha Squash
From Alicia Silverstone's "The Kind Diet", this dish was absolutely perfect for a cool fall Monday - filling and satisfying. :)
~ Azuki (adzuki) beans are a type of bean from East Asia/Himalayas. We found this and the kombu (the most innocuous seaweed imo :)) at the health food store. To me, it's sort of like a smaller black bean, a little heartier and more flavorful - nuttier. Of course, this can be substituted as with all things. ~ Shoyu is soy sauce - we used Bragg's Liquid Aminos instead.
~ We used the Hubbard Squash my Mom gave us yesterday, versus the Kabocha mentioned in the recipe.
~ I added in some carrots and red peppers for fun. :)
